When Gianni Manucci (Owner/Winemaker) retired from architecture, he took all his skills and passion to transform an entire forty acre site from dirt to wine. His education from UC Davis in winemaking and his European roots in grape farming created a truly unique landscape similar to the Tuscany region. Coupled with his wife (Kati Manucci) with interior design & food catering allows them to complement each other and share their passion. They have three children (Christian, Sage Isabella, Sophia) all born and raised on the estate and starting to take interest in helping papa & mimi.

 

 

Handcrafted Wines “Keeping It Real…”

Wild Coyote is known as the House-Of-Reds with old-world winemaking attitude; go Big, Bold, Unfiltered or go home. Our wines are produced from our single-estate vineyard and “if we don’t grow it, we don’t make the wine”. To us it is all about total control from farming to winemaking. All our wines are entirely aged in French oak barrels for a minimum of two years and then continued aging after bottling for at least one to two years before they are sold. The production is very limited (less than 3,000 cases per year) therefore sold exclusively on our premises or Club membership, but not to retailers. Vineyard “All about the grapes…”

Our sixteen acre vineyard is dry-farmed so the grapes are stressed for maximum flavors for its limited varietals grown. As my grandfather used to say “if you grow good grapes, you’ll have good wines”. To us it is all about being small, but the best at what we do. Quality is more important than quantity “and up here it’s all about pounds of grapes per vine not tons per acre.

Tasting Room “One-Of-A-Kind…”

Unpretentious and welcoming, this circular tasting room with adobe style architecture, completely designed, built and decorated by the owners with taste and artistry in mind. Beautiful panoramic views, with plenty of outdoor seating and relaxation. You will most likely be served by the winemaker or a family member.

  • Hours: 10am-5pm daily
  • No tasting fee, if min. 1-bottle purchased per tasting
  • Major incentives on multiple bottles purchased
  • Club sign up with major discounts
  • Reservations will be required for large parties, and private tours
  • Parking is limited, but it will accommodate tours & limousines, etc.

We had the pleasure of staying at this adorable B&B for our Anniversary recently. The location is just beautiful up in the hills on the west side yet just a short drive to downtown Paso Robles. From the views, to the wines, to the decor, to the staff and the amazing breakfasts, this stunning place is an incredibly unique winery & very romantic B&B NOT to be missed! We will definitely be back!

Found this winery as we drove down Adelaida Road. Excellent smaller winery with a number of single varietal wines; all grapes grown on site. Have a newer tasting room and often the owner is pouring. They also have bed-n-breakfast units if you want to stay overnight….on my bucket list for another trip.

 

Trip Advisor Aug 2017- Beautiful Scenery and Red Wine Combo

We visited as part of a wine tour but I wouldn’t hesitate to visit again independently. Located in a beautiful location, surrounded by vineyards and rolling hills, this is a perfect location to sample Paso Robles Reds. Our tasting started off with a lovely sparkling Rose and continued with very full reds. If possible, make sure you sample the port. Not only does it come in an amazing bottle, it also tastes divine! Service was also fantastic here, no pressure to buy which to me, is always a high priority when tasting.
